Chicken Coco Ribe 4 boneless skinless chicken breasts 1 T butter 1-2 cups Coco Riber or quality coconut rum (the rest of the bottle might mix well with some pinapple juice) 1.5 cups half & half (I've also seen this done with coconut milk) 1 T Curry 1. Melt butter & saute chicken until done. 2. Add curry to half & half. Stir to blend and let stand. 3. When chicken is cooked, add coconut rum and simmer for 20 minutes. Don't let the pan (or your throat) go dry. Add more rum if necessary. 4. Add curry mix to pan and coat chicken. Simmer another 10-15 minutes until sauce reduces.
