I got this from a friend of mine... It was incredible. And of course, 5 ingredients or less... this is my kind of recipe! Chicken Coco Ribe 4 boneless skinless chicken breasts 1 T butter 1-2 cups Coco Riber or quality coconut rum (the rest of the bottle might mix well with some pinapple juice) 1.5 cups half & half (I've also seen this done with coconut milk) 1 T Curry 1. Melt butter & saute chicken until done. 2. Add curry to half & half. Stir to blend and let stand. 3. When chicken is cooked, add coconut rum and simmer for 20 minutes. Don't let the pan (or your throat) go dry. Add more rum if necessary. 4. Add curry mix to pan and coat chicken. Simmer another 10-15 minutes until sauce reduces.

Ok, so my "To-do" list has been getting a little overwhelming. As I was drafting it out, I noticed that I have some larger sized sticky notes with lines. My theory is that if I chunk the big list into smaller lists, it will be less intimidating. So far, I have a lot of sticky notes on my computer desk :)

I got the best laugh with my daughter today. You know the game where you pinch a kid's nose between your fingers and pretend to pull it off? Well, I did that and told her that I had her nose and she believed me. She gave me this priceless look that was a mix between horror and amazement. Then I 're-attached' her nose and she laughed. Then, later in the night... I took her nose and threatened to nibble on it. She squealed "NO - don't eat my nose! Put it back on!" It was too funny!
